The region Limoux, is renowned for making excellent sparkling wines in the Traditional Method (see VN2197).
This wine is classified as Limoux AOP (Appellation origin Protogé, established since 1993) for dry white wines only, made from a high proportion of Chardonnay. The winemaker has done remarkably well maintainimg the lovely freshness with good acidity (not picked too late), well integrated (therefore not overpowered) and by the small percentage that is barrel aged, not too alcoholic at 13.5% vol.
Being in the heart of the Mediterannean (where there are extreme temperatures both night and day), luckily Saint-Roch has some cool sea breezes from the coast. Also being further inland and at higher altitude helps maintain the grapes acidity.
Lovely ripe apples and pears with a touch toasted brioche, medium bodied and drinking well over the next 2 years.
