The Domaine has 4 hectares of Trousseau, a rare red variety which represents only 5% of Jura’s land under vine. Trousseau often struggles to ripen sufficiently, so yields are restricted to 45hl/ha and it is hand-harvested with careful manual sorting (triage).
This Trousseau is vinified traditionally, making use of large, ancient oak barrels for gentle oxygen influence without imparting dominant oak flavours. It displays wonderful raspberry fruit and vanilla spices, lovely light in colour and tannins. 13% vol
