I have been a great fan of these wines from the Campo de Borjas region of Aragon in north east Spain, not only for their value but their honesty and purity of fruit, which I believe in part comes from the fact some of the wines here can be over 80 years old.

El Risco is a blend of Syrah with a dash of Garnacha and Garnacha Tintorera (black skins and pulp) from old, high altitude vineyards in Campo de Borja. Winemaking is very simple: the grapes are co-fermented, with a small proportion of whole bunches and a short maceration with 4 months in old, large French barrels.

The resulting wine is dark and spicy with wild berries and a smooth finish.

Drink with Wild boar, Wild boar sausages, or just good old fashioned sausages, it will be delicious, and although suitable for vegans and veggies this food pairing suggestion, less so! But just enjoy it whatever you are serving it with…
