30 year old vines trellised in the old way of a Pergola system. The grapes are picked late and then left to dry out on straw mats for 5 months. About 10 % of the wine was allowed to undergo ‘noble rot’: this intense sweetness and cabbagey notes is aged in oak casks for 2 years.
