Oenops was founded in 2015 by talented winemaker Nikos Karatzas, who operating as a négociant, produces a stunning range of distinctive wines from his newly stablished stateof-the-art winery. The grapes come from a carefully selected, western facing vineyard in the Kilkis region of Central Macedonia.
This wine was vinified following a philosophy of minimal intervention. The grapes were carefully sorted before being fermented in amphorae, with wild yeasts which are associated with retaining the nuances and characteristics of the terroir. Following fermentation, the wine rested on its lees for approximately six months, before being bottled unfiltered.
Complex aromas of white floral notes, stone fruit and lime are layered with mineral notes through to smooth palate with restrained acidity offering balance and freshness. 12.5% vol.
